What is Muthia?

It is a staple food of Gujaratis. This dish is supposed to be good for keeping bowel movement regular, because it includes fenugreek. It is a Gujrati cuisine. Muthiya serves as a great snacks  and can be enjoyed with  a cup of hot masala tea.

How to enjoy Muthia?

Muthia can be enjoyed steamed or enjoyed crispy by pan frying them.

How to make Muthia

Ingredients

  • 2 cups whole wheat flour
  • 1 cup gram flour (besan or chickpea flour)
  • 2 cups grated bottle gourd (lauki or doodhi) squeeze out all water from it.
  • 2-3 tbsp oil
  • 1 tsp green chili paste
  • 1tsp ginger paste
  • ½ tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp fennel seeds
  • 2 tsp coriander powder
  • salt to taste
  • 1 tbsp sugar
  • ½ tsp soda by carb

For Tempering:

  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • pinch of asafoetida
  • 1 tbsp sesame seeds
  • some curry leaves
  • Coriander leaves for garnishing

Instructions

1)Take wheat flour and gram flour into mixing bowl. Add ginger and green chili paste. Add oil, and all spices like turmeric powder, red chili powder, coriander powder, soda bi carb, fennel seeds, salt and sugar.

2)Now mix all dry ingredients first. Then add grated bottle gourd. Mix it well by hand.

3)Make dough like mixture, you will not need water. But if needed add little curd.

4)The dough will be sticky, so grease your hands with some oil, and make cylindrical rolls from it. Put them into steamer.

5)steam them on medium, for  15-20 minutes.

6)Remove from gas, and let it cool down for 5 minutes, then transfer them into plate and cut them into slices.

For tempering:

1)Heat the oil in a pan on medium for tempering. Once  the oil is hot add mustard seeds, cumin seeds, sesame seeds, curry leaves, asafoetida .Let them splutter.

2)Then add  the sliced Muthia. Mix gently so they do not break and saute till you get little  golden brown and slightly crispy texture.

3)Turn off the heat. Garnish  it with cilantro leaves.
