It is a scrumptious pudding made from grated beetroot simmered in milk, spiced with cardamom and served with roasted nuts. Halwa is a very popular Indian dessert.

There are many varieties of halwa like carrot halwa, beetroot halwa and bottle guard halwa. The most popular among them is “Carrot halwa”. Beetroot halwa is prepared in the same manner as Carrot/Gajar halwa. If you have only tried gajar halwa before this, get ready for this recipe where instead of carrots, beetroots are used to make a delicious halwa.

Can you add mawa or khoya(dried evaporated milk solids)?

Yes you can absolutely add mawa or khoya to the recipe to make it more creamy and rich. You can add it, once the grated beetroot are almost cooked.

How to make vegan Beetroot halwa ?

Yes you can also make beetroot halwa without milk or it can also be made using almond milk  or soy milk or any other vegan milk. You can also substitute ghee with oil and milk with water. It will miss some of the creaminess, but still tastes great.

How to serve Beetroot halwa?

  1. Serve hot garnished with cashew nuts. 
  2. The halwa taste great when chilled and served with a scoop of Vanilla Ice Cream.

How to make beetroot Halwa

Ingredients

  • 2 cups grated Beetroot 
  • 2 tbsp Ghee (Clarified Butter)
  • 1 1/2  cups Full Fat Milk 
  • 3 tbsp Sugar (or as per taste)
  • 1/8 tsp Cardamom Powder
  • Cashew Nuts, optional for garnishing 

Instructions

1) Wash the beetroots in running water. Peel them and cut from the bottom.

2) Grate them using a grater (use side with larger holes to grate the beetroot to make thicker strands).

3) Heat the pan  and add the Ghee. Once the ghee is hot, add the cashew nuts and saute till the nuts turn golden brown. Remove the nuts and set aside. Transfer them to a plate.

4) in the same pan, add the grated beetroots to the remaining ghee and saute on low to medium flame for aprrox 10 minutes or till the rawness reduces.

5) Add the milk and cook the beetroot on low medium flame. Stir once in a while so that it does not stick to the bottom of the pan. Allow the milk to be absorbed. Stir in between occasionally.

6) When the mixture turns thick, add sugar and cardamom powder. As the sugar melts, the mixture will turn watery. Stir and cook until it turns thick.

7) It might take 10 to 15 minutes. Turn off the heat when done. Add the roasted cashew nuts and serve.
