Recipe for Vegetable Pulao
It is tried and tested fail proof recipe when I have to cook food on short notice for a guest or on busy weekends when other chores need to be done. Making my vegetable pulao is a breeze with an instant pot! It saves my time and no babysitting needed.
Why you should buy an Instant Pot?
Instant Pot isn't just an electric pressure cooker. It acts as multi cooker, sautés food like a stove-top skillet. It also steams like a steamer items such as fish, eggs and vegetables, cooks rice like a rice cooker and makes porridge, makes yogurt. You can use them to bake too.
What's the Difference Between a Pressure Cooker and an Instant Pot?
Instant pot has many advantages over pressure cooker like it has many different modes, mostly set it and forget it, you can adjust it to low or high pressure. Finally it is usually quieter than stovetop cookers whistles. Whereas pressure cooker are only for pressure cooking and require more attention. Cannot adjust the pressure level and whistle sound is loud (imagine when you have the zoom calls 😜).
I personally like my instant pot because all of the different things it can do, and the Instant Pot being automated means I can work on other things in the the kitchen while setting something up to finish on its own, I don’t have to baby sit. It's a really useful tool that makes cooking easier. I love my Instant Pot - specifically, making yogurt in it at least once a week, rather than buying it from the store.
What is vegetable pulao?
Pilaf also called as pulao is a one-pot dish. Pulao uses a very simple cooking style wherein vegetables are sautéed first, then the rice is added and then both of them are cooked together in a predetermined quantity of water with some spices. It is a delicious combination of rice, vegetables, ghee, and condiments. You can use oil for cooking too but ghee taste much better.
This recipe is for making pulao in Instant Pot. You can also use the same recipe to make it in a traditional pressure cooker. This is a one pot dish and hence it is super quick and easy.
What are the different types of pulao?
There are varieties of pulao you can try at home and enjoy with your family like peas pulao or matar pulao, gajar matar (carrot peas) pulao, Kashmiri pulao, corn methi pulao, chicken pulao and the list goes on.
What to serve with vegetable pulao?
Indian vegetable pulao is traditionally served with cucumber raita or onion raita, papad and pickle.
I personally like to serve my vegetable pulao with mint chutney and raita.
How to make vegetable Pulao in Instant Pot
Ingredients
- 3 cups - Rice
- 3 1/2 cups - Water
- 1 Large Onion sliced thin
- 1 small piece ginger grated
- 5 Cups Mix Vegetables including Potatoes, Cauliflower, Green Beans, Carrots, Peas, Corn.
- 1 1/2 tbsp - ghee
- 1 tsp - Cumin seeds
- 1 large Bay leaf
- 1 small Cinnamon stick
- 6 Black pepper corns
- 3 - 4 Small Green Cardamom
- 2 tsp Garam Masala
- Salt to taste
Instructions
1) Take rice in a bowl and wash it well. Then soak the rice in water for 30 minutes. After 30 minutes drain the water. Soaking rice gives soft rice and needs less water to get cooked, hence we get separate grains.
2) Meanwhile, the rice is soaking, wash the vegetables. peel and chop the vegetables and keep them ready to use. You can use any vegetables of your choice. Along with some fresh vegetables I used here few frozen ones too. Cut all the vegetables in 1 inch bite pieces.
3) Press saute on high. Once the screen displays hot, add ghee to it. Also, add cumin seeds, bay leaf, cinnamon stick, black pepper corns, green cardamom to the pot. Saute for few seconds.
4) Add thinly sliced onions and grated ginger to the pot. Saute for about 5 minutes, till onions are pinkish in color. Sauté in between to avoid burning.
5) Once the onions are pink, then add all the other vegetables in the pot. Mix gently.
6) Then next add soaked rice to the pot. Stir all the ingredients together gently. Add water, garam masala and salt. Stir again.
7) Now cancel the sauté mode. The water quantity can be adjusted at this point. Water should be slightly above the rice, so that all of the rice is submerged inside it for even cooking. More water will turn rice mushy . And if you put less water then rice might burn.
8) Next place the lid of the instant pot and lock it to No Venting. Press the Pressure Cook/Manual Mode and set it to 4 minutes on More and high pressure.
9) It will take few minutes for instant pot to kick in. Once the timer goes off after 4 minutes, do Quick pressure release. As soon as the safety pin drops down. Open the Lid. Let it sit for few minutes. Then take a fork and separate the rice grains gently and serve hot.
