This is an  easy one-pot Lemon Rice recipe also called as Chitranna.

This tangy lemon  flavored rice is a popular south Indian dish. It is a perfect side  dish or a light meal. Lemon rice is a great way to turn your plain rice into a flavor packed rice. It is quick fix rice recipe that can be packed in lunch box for school going kids. Making lemon rice is not at all time consuming, which is the best part about this recipe.  I love eating lemon rice, tamarind rice in temples, where they are commonly offered as a prasadam (offerings to God). They always taste delicious to me. Today I am sharing my instant pot lemon rice recipe with you.

Ingredients  that are used to make lemon rice

Rice - I used Basmati rice but you can choose your own rice like long grain rice if you prefer . You can also use precooked rice for this recipe.

Lentils: Urad dal or chana dal are used in lemon rice to add that crunch in dish.

Lemons: To make a good refreshing lemon rice always use fresh lemons. You can also use limes.

Cooking oil: Lemon rice can be made with any cooking oil like peanut oil, sesame oil or sunflower oil or ghee.

Nuts: Traditionally peanuts are used to add crunch to the dish. You can substitute it with cashew nuts.

Tempering ingredients: Fresh ginger, curry leaves & green chilies totally elevate the flavor of the lemon rice. These are the 3 ingredients that are key to making the dish. 

Which  rice to use for making lemon rice?

I used basmati rice but can use white long grain rice. Jasmine would also  be good each rice has its own flavor and takes its own time to cook .If you use brown rice it will take more time to cook than the other rice.

What to serve with Lemon Rice?

  • Serve it with yogurt  
  • Serve  it with a curry
  • Serve it with pickle 
  • serve it with roasted potatoes
  • serve it with chicken as a side dish

Can I use left over rice to make Lemon Rice?

Many people make lemon rice with leftover rice . So Yes you can certainly use that left over rice from the  last time. In this case all you need to do is, temper the rice in some oil  or ghee along with the herbs and salt mentioned in recipe ingredients .

How to Make Lemon Rice

Ingredients 

  • 1 tbsp Ghee or Cooking oil
  • 1 tsp mustard seeds
  • 1 tbsp Chana dal (split chickpeas)
  • 2 - 3 whole green chili slit
  • 1 dried red chili
  • Few curry leaves
  • Pinch of asafetida
  • 1  to 2 tbsp peanuts (groundnuts) or cashews (optional) roasted
  • 1 tsp ginger  minced
  • Salt as per taste
  • 1 tsp turmeric powder 
  • 2 cups rice rinsed 
  • 2 1/2 cup water
  • Lemon juice  from 1 lemon
  • Coriander leaves for garnishing 

Instructions 

1) Heat the ghee or cooking oil in the Instant pot on saute mode. Once the oil is hot, add mustard seeds, asafetida, curry leaves, ginger, red dried chili  and  green chili and chana dal give it a quick sauté.

2) Next add washed rice and add  turmeric powder, salt, water, and give it a good stir. Adjust the water according to rice don’t add too much else it will be mushy.

3) Close the lid and let it pressure cook for about 6 mins on manual or pressure cook mode( high pressure)

4) Once done, press cancel and let it release pressure naturally, or wait for  4 - 5 minutes and carefully release the pressure manually by moving the valve from sealing to venting position. Remove lid  and add roasted peanuts or cashews, lemon juice and garnish with fresh cilantro/coriander leaves. Gently mix everything together.

5) Lemon Rice is ready  to be served.
