Sabudana Khichdi for fast

Recipe for Vrat wala Sabudana Khichdi

If there is one dish that can give your taste buds a unique flavour during vrat/fast, it's Sabudana Khichdi. When you keep a fast or vrat, you are entitled to  have Saatvik diet that's made without onion & garlic and thus a dish like Sabudana Khichdi is an absolute delight that you can enjoy. It is onion garlic free recipe. My boys  love this khichdi. Even if they are not fasting they love eating it whenever I make it. It's an absolute delight and an amazing dish for Navratri and Shivratri vrat  as people indulge in Saatvik food.

You can give your own twist to this easy khichdi recipe with your favourite spices  and vegetables like carrots to accentuate the taste. Also add curry leaves and tomatoes if you want and can make it in breakfast.


INGREDIENTS OF SABUDANA KHICHDI

Two main ingredients required are potatoes and sabudana also called as sago.


HOW TO MAKE SABUDANA KHICHDI

Ingredients

2 medium potato
2 - 3 green chilli
5 tbsp  Ghee or oil
1 lemon juice
1/2 cup  crushed dry roasted peanuts
                1-2 tbsp peanuts 
1 tbsp Cumin seeds
1 small bunch coriander leaves
Salt or Sendha Namak for fasting  as per taste
2 cup water


Instructions

1) Wash sago well and soak it overnight (or atleast 5 to 6 hrs) with water just enough to immerse the sago. The next day morning, all water should have got absorbed by the sago and it will be soft and fluffy. If you soak same day, make sure that the soaked sabudana turns moist and soft. If not, then, soak it for another two hours else the sabudana will remain uncooked in the khichdi.

2) For making khichdi Mix sabudana  with crushed dry roasted peanuts, salt, lemon juice and coriander/cilantro leaves.

3) Boil potatoes and cube it and keep aside. In a non stick pan, Heat ghee or oil, fry peanuts and keep aside.

4) Then in the same pan temper it  with cumin/ jeera, followed by green chili. Then Add the cubed potatoes, little salt and fry for a minute. Then next add the sago mixture  along with fried peanuts and stir well and cook on medium heat for 4- 5 minutes, until transparent and soft. Make sure you stir in between to avoid sticking to the bottom.

5) When done, garnish with chopped coriander/cilantro leaves and serve with a lemon wedge.

Tips  for clump free / non-sticky sabudana khichdi

1) If you want a clump free (non sticky) sabudana khichdi, soak the sabudana overnight or at least 4-6 hours.
2) Always maintain 1:1 ratio between sabudana and water. Do not use more water else sago or  sabudana  will turn mushy.
3) Cooking the sabudana pearls for longer makes them sticky and will turn to lumps.
