What is the Difference between Biryani, Pulao and Tehri?
In Biryani, the meat/vegetables and rice are cooked separately and then they are layered .
In pulao ,long grain rice is soaked in water. For vegetarians, plain water and aromatic spices are used to cook Vegetables and Rice together. Generally, dried fruits and fried nuts are added. In North India, normally Pulao refers to a Vegetarian Pulao.
Tehri was made with Potatoes and Rice but other vegetables may be added. Tehri is the name given to the vegetarian version of the rice dish and is very popular in North Indian.
Which vegetables are used to make Tehri?

How to make Vegetable Tehri
Ingredients
- Cumin -1/2 tsp
- Ghee -3tbsp
- Grated ginger-1tsp
- Vegetables(carrots ,potatoes ,cauliflower ,peas ,capsicum)-2 cups
- Rice-1 cup
- Coriander powder-1/2tsp
- Turmeric powder -1/2tsp
- Red chili powder -1/2tsp
- Curd-1tbsp
- Salt to taste
Instructions
1. Wash the rice nicely with water. Drain the water and keep the rice aside.
2.Heat the ghee in a cooker
3.When it’s hot put cumin seeds , let it splutter .
4.Add the grated ginger.
5. Put in the vegetables together and cook it for 4 to 5 min, keep stirring .
6. Now Mix the other spices like turmeric powder, coriander powder, red chili powder and salt.
7.Add curd and mix it well.
8. Add water to cook the rice then stir again, and cover the lid and pressure cook for 1 whistle .let the pressure release naturally.
8. Serve it hot with plain yogurt or raita .
