How to make stuffed mini peppers with Paneer

Ingredients 

  • Mini peppers – 15
  • Shredded mozzarella cheese – 3 tbsp
  • Paneer, frozen cubes – 1 cup(thaw before using)
  • Onion – 1 small
  • Tomato – 1 small 
  • Green Chili – 2(optional)
  • Lemon juice – 2 tsp
  • Coriander leaves(cilantro)– 1tbsp
  • Red chili powder – 1/2 tsp
  • Chaat masala – 1/2 tsp
  • Salt as per taste

Instructions 

1) In a pan  add little oil and fry onions till translucent, then add tomatoes and cook  for a minute then add the crumbled paneer.


2) Next add the  red chili powder, chaat masala ,salt ,cilantro and finally add the lemon juice. Mix it all properly and turn off the heat.


3) Let the mixture cool down .


4) Meanwhile wash the mini peppers, pat them dry and cut  them lengthwise and remove the seeds.


5) Put them in a bowl and  toss it to coat  with olive oil.


6) Preheat oven to 400 degrees. Spray a baking  sheet with nonstick cooking spray and set aside.


7) After the mixture has cooled down, fill the peppers with the paneer mixture. Sprinkle little cheese over it.


8)Arrange in a baking tray and bake for 15 to 20  mins.


9) It will be done when cheese turns slightly golden.
