Recipe for Vegetable Au Gratin 

What is vegetable Au Gratin?

Vegetable Au Gratin is one of the delicious cheesy vegetable casseroles that are the perfect side dish for any time of the year. I have combined Broccoli, cauliflower, carrots, with other veggies and tons of creamy cheese sauce, all  are baked to perfection to form a golden crust on top in one casserole dish.

What is in au gratin?

Vegetable au gratin recipe is a continental delicacy made with mixed vegetables and white sauce as base. Vegetable au gratin or veg au gratin has all the vegetables drowned in white sauce with lots of cheese, its creamy with a crusty top. It can be served with toasted bread.

Can frozen vegetables be used in making  vegetables au gratin?

Yes Fresh or frozen vegetables of your choice can be used. I have used combination of both in my recipe.

How to make  Vegetable Au Gratin

Ingredients :

For the  white Sauce -

1. All purpose Flour - 2 Tbsp.

2. Butter - 2 Tbsp.

3.Milk - 1 1/2 Cups.

4. Salt - to Taste

5. Italian Seasoning - 2 tsp. 

6. Crushed Red Peppers -2 tsp

7.cheese- 1tbsp

Vegetables :

1. Cauliflower Florets - 1 Cup

2. Broccoli florets - 1 Cup

3. Onion - 1 medium sized.

4. Bell peppers(I used green and yellow)- 1 Cup

5. (Carrots ,Green Beans ,Peas )I used frozen ones -1 1/2 cup altogether

For the Crust :

1. Cheese - shredded cheese

2. Italian seasoning

3. Chili flakes

Instructions:

1. Set the oven to 400 degree F and let it pre-heat.

2. Blanch the Cauliflower and Broccoli and keep them aside.

3. Heat a skillet on the stove, add the Olive Oil. Once the oil heats up add the chopped onions and fry till it starts turning translucent . Add the bell peppers to this and fry them

4. Add the Carrots, Beans , peas , broccoli and cauliflower florets and mix them.

5.Add salt to taste.

How to make  the  white Sauce for vegetable Au Gratin ?

1. Heat butter in a skillet and wait till it melts.

2. Add flour to this butter and fry little don’t let the flour brown.

3. To this add the milk slowly. Stir it continuously as you pour the milk to ensure that no lumps are formed.  Keep stirring till the mixture thickens and coats the ladle.

4. Add the salt, the Italian seasoning and Crushed peppers to this sauce. Also now you can add cheese to this and turn off the gas.

5.Add all the veggies to the sauce and ensure that all the vegetables have an even coating of the sauce.

Now to assemble All the Items :

1.Take a baking pan , Grease it with oil or non-stick spray. Transfer the vegetables coated with the sauce to the pan.

2.Add the Cheese on top of this to make another layer .sprinkle chili flakes and Italian seasoning and bake it for 20-25 minutes or till all the cheese melts and it has a nice brown color on top. After that You can also broil it for a minute for a nice golden brown color.
