Recipe for Dahi ke Sholay

Well this unique dish comes from north India and is really famous in Delhi as Indian street foods. Dahi kebabs or Dahi ke sholay as it is popularly known as is prepared with rolled bread and hung curd stuffing and then is deep fried till crisp from outside. You can also bake it or use your air fryer. The combination of curd and paneer makes it unique and tempting. It is creamy inside and crispy outside and just melts in your mouth. It makes perfect evening snack or appetizer. These bread curd fire rolls, can be served with chutney or ketchup.
While making this you have to take care of couple of things like the curd you use should not be watery at all. Squeeze out the water as much possible. Also once you have added veggies and salt to the hung curd, do not keep it for long as the veggies will leave water. And at last before frying the rolls be sure that it is sealed properly.

What is Hung Curd?
Hung Curd is the curd whose whey has been squeezed out completely, so that it is not in runny texture.
List of the things used to make dahi ke sholay( bread pockets stuffed with yogurt)
Bread- you can use white or brown bread.i have used white sandwich bread in my recipe
Yogurt- Squeeze out water nicely. Use hung curd.
Veggies- I have used onions, bell pepper, carrots
How to make Dahi ke sholay
Ingredients
- 1/2 cup hung yogurt
- 1/4 cup paneer crumbled
- 1-Small onion finely chopped
- 1-Small Capsicum finely chopped
- 1-Small Carrot grated or chopped
- 1tsp -Black Pepper powder
- 2- Chopped green chilies
- 6-7 Bread Slices
- 2tsp -Maida (All Purpose Flour)
- 4tsp -Water
- 2tbsp -Chopped Coriander
- Salt To taste
- Oil For Frying
Instructions
- Take hung curd in a bowl and then add the chopped bell pepper ( green capsicum), chopped onion, grated carrot ,crumbled paneer (Indian cottage cheese), coriander leaves(cilantro) ,chilies and mix everything well. You can add veggies of your choice too like corn , cabbage. Add the black Pepper powder and salt, mix well.
3) sprinkle some water over it. and then flatten it using the rolling pin.
4) Next mix maida (all purpose flour)with water and make the lump free ,thick slurry which will be used to seal the edges of the rolls.
5) Next keep a tbsp of stuffing in one corner of the bread and brush the slurry around the remaining corners and then roll the bread.
6)Start folding the bread into a roll. If your bread is little crumbly, you can even place the bread slice over a plastic and then roll it. It really helps.
7) Slightly press the corners of the roll sealing it nicely while gently twisting them like a chocolate wrapper each in opposite directions .This will help in sealing the bread rolls from both ends.
8) Do this for remaining bread and keep aside.
