Rava Gujiya without mould


Any festival is incomplete without sweets. As Holi festival is near by I thought of making karanji that’s what we call it in Mumbai. In northern India it is made on the occasion of Diwali and Holi festivals. It is also known by the names of Gujiya in north  and Ghughra in Gujrat and is specially served  during Holi as a treat. 

This  Gujiyas are made by stuffing mawa/khoya or suji/rava  with coconut flakes and nuts. You can replace sugar with jaggery in this recipe. For more sweetness you can also prepare a sugar syrup to dip these Gujiyas called as chaasni. If you are stuffing Gujiyas with mawa then  it  has to be consumed  within 2 to 3 days. If you make filling with the rava/semolina then it has a longer shelf life. 

So if you are planning to celebrate Holi with your friends why not  try this traditional Gujiya recipe at home for coming  Holi. For  making Gujiyas you need a mould for shaping that you can easily find it online or any Indian grocery stores. But if you not have mould do not worry you can still make it the way I made it. I learned this recipe from my mom .

How to make Gujiyas | Karanji 

Ingredients for making gujiyas:

For outercrust:

2 cup maida / plain flour
½ tsp salt
2 tbsp melted ghee
Water to knead the dough 

For stuffing:

1 tbsp melted ghee or clarified butter
½ cup rava  / semolina (fine)
1 cup  dry desiccated coconut 
1-2 tbsp cashew nuts , almonds chopped 
¼ tsp cardamom powder
1 cup powdered sugar

Other ingredients:
Ghee or oil for frying
water to seal karanji or gujiyas 

Instructions for making Gujiyas or Karanji

To make the dough for gujiyas

 Firstly, in a large bowl take maida, salt and mix well then pour melted ghee over flour and mix well till it becomes like a crumbled mixture. Then slowly add the water  and knead the dough to a smooth and soft  dough. Grease your hand with oil or ghee and pinch out balls for Gujiyas. Cover and rest  it till we make the stuffing for Gujiyas.

Stuffing preparation:

Now prepare the stuffing, by roasting rava in ghee on low flame. When it’s almost done add  dry  desiccated coconut, and roast on low heat and add chopped nuts into it, let it cool  down completely. Now add powdered sugar, cardamom powder and mix well. Our stuffing is ready.

How to prepare  gujiyas or karanji  without mould

For Making Gujiyas without the mould, take a small size ball of the dough. Roll it in a thin circle. In the half fold, place some gujiya mixture.

Apply little water along the edges and seal it tight. Fold gujiya into half.

Shape them as per your choice like you could use fork to give them design I used pinch and fold in method for it.

Gujiya is ready for frying. You can fry them in batches just avoid overcrowding.

Tips for making Perfect Gujiyas

  1. Make sure gujiyas are sealed tightly so that the stuffing does not come out while frying .
  2. Do not brown the rawa while roasting them in ghee else they won’t taste good .
  3. Do not add sugar while the mixture is hot.
  4. Do not overstuff the the gujiyas with the stuffing mixture else gujiya might tear while frying.
