Now why bother making homemade yogurt?

Well, it tastes better than store-bought yogurt. You can save some cash and make even healthier yogurt than what you get in the store !

The beauty of homemade yogurt is that it is it's own starter culture. As soon as the yogurt is done you can set aside a couple of spoonful to make another batch. I prefer taking them out of the fresh jar immediately and storing them in a separate container .

Preparing yogurt without the instant pot, it was difficult to get it right each time. Especially here in USA, in the  harsh winter when the weather is cold.  But with the instant pot now you can get that perfect yogurt each time 😄

What ingredients do you need to make yogurt?

Only  two ingredients you’ll need to make yogurt: milk and a yogurt starter culture.

What is Yogurt Starter?

A yogurt starter is the collection of desirable, living bacteria that turns milk into yogurt. The starter culture you use will affect the flavor and texture to an extent.

How to make yogurt in Instant Pot


Ingredients

  • 2 litres (½ gallon) Whole Milk
  • 32 grams (a little more than 2 Tbsp) Plain Greek Yogurt with Active Bacterial Cultures

Instructions 

Step One: How to Sanitize your instant pot 

To remove any odors, if you do a lot of cooking with spices. Especially If you’re making the yogurt directly in Instant Pot’s stainless steel container like me, sanitize the cooker by running Instant Pot on the pressure steam program for one minute with 1 1/2 cups of water. Set the valve on the lid to “Sealing” push the [steam] button and then the [-] button until you get down to one minute. When the program is finished, release the pressure and then pour out the water.

Step Two: Heat your Milk in your Instant Pot.
Pour ½ gallon milk into the inner pot of your electric pressure cooker, put the lid on the Instant Pot (vent can be sealed or not sealed in this function). Hit yogurt function and then the adjust button until it says Boil.
When the Instant Pot beeps that it is done, press the cancel button.

Step Three: Cool the milk 
Cooling the milk takes about 45 minutes to  1 hour so just open the lid and keep on your kitchen counter.

Step Four: Remove the skin of milk(Optional) 
Since some people dislike the texture it creates. Once your milk has cooled down, skim off the top layer of milk "skin" that has formed on top of the liquid.

Step Five: Whisk in a yogurt starter.
Use either prepared yogurt or a yogurt starter and whisk into your prepared milk.
It is important to note that if using prepared yogurt you need to be sure it is plain yogurt with live and active cultures. If your starter is sweetened or does not have live cultures, making yogurt at home will not work.

Step Six: Allow your yogurt to Incubate.
To finish making your yogurt, place your inner pot back in your Instant Pot with lid on ( it doesn't matter which way valve is set). Hit Yogurt button again. Adjust until it reads 8 hours.

Step Seven: Done - Open Instant Pot after 8 Hrs when it Beeps
Transfer to glass jars or a plastic container and refrigerate .
