Recipe for Bread Upma
It is a bread-based savory dish. It is actually a variation from the basic Upma dish that is prepared from semolina or rava. Even those who do not like upma will love this bread upma. This is one of the easy dish to make for a lazy weekend breakfast.
Bread is always found sitting on our kitchen counter top, and has rescued us countless times when we need something real quick. This is one such dish that can be made for weekend breakfast or as an evening snack with tea.
This super easy bread upma is my go-to dish when a pack of bread is nearing the end of its shelf life. It is also a good way to use up things when you’re clearing your pantry and fridge. Many times with leftover bread, I make bread pakora or this bread upma. Bread upma can be made with any veggies of your choice; I’ve kept it pretty basic with the veggies I had with me.
Which bread is used to make bread upma?
You may use any bread for this upma. I had some white bread at home and that’s what I used in this recipe. You may use brown bread, multi-grain bread.
Do you need to trim the bread edges for making bread upma?
Personally I don’t trim the edges. In fact I use up the first and last bread too for this recipe but if you want you can trim the edges of the bread for this recipe.
Can one pack bread upma for the lunchbox ?
Kids will love this dish and you can pack in their lunch box. Just Toast the bread slices prior to making it. Make sure that you pack it after it has cooled down to room temperature, otherwise steam from it will make bread soggy in the lunch box.
Do you toast the bread while making bread upma?
If you don’t like eating soft bread you can simply toast the bread slices before using in the recipe. I did not toast them since I prefer soft bread in my upma.
How to make bread Upma
INGREDIENTS
- 5 Bread slices
- 1 small Onion roughly chopped
- 1 Tomato – chopped
- 1/4 cup Capsicum chopped
- 1/4 cup carrots chopped
- A small piece of Ginger chopped
- 1 Green chili slit
- Curry leaves
- Coriander leaves for garnishing
- 1 tsp Turmeric powder
- 1 tsp Chili powder
- 1 tsp Garam masala
- 1 tsp Mustard seeds
- 1 tbsp Oil
- 1 tbsp Lemon juice
- Salt – To taste
INSTRUCTIONS
1) Cut bread into small cubes, and keep aside. You can roughly tear them into bite size pieces.
2) Heat oil in a pan, and add mustard seeds. Let it splutter. Toss in the curry leaves, chilies, ginger. Sauté till the raw smell of ginger is gone. Add the chopped onion, and cook till onions turns soft. Once cooked, add the chopped tomatoes. To the mixture, add the dry spices Turmeric powder, Chili powder, Garam masala or Pav bhaji masala or sambhar masala and salt.
3) Mix to combine the ingredients. Sprinkle a little water to let the tomatoes turn slightly mushy. Once the tomatoes have turned soft and mushy, add the capsicum and carrots. Mix everything well. Sprinkle a little more water, cover and cook for 2 to 3 minutes.
4) Then next add the bread pieces. Give it a good mix and ensure the bread is coated in the cooked veggies.
5) Allow this to cook for another minute. Turn off the heat, squeeze the lemon over the bread upma and garnish with the chopped coriander leaves.
Total time 20 minutes
