Recipe for Chole Bhature
The combination of ‘Chick pea curry' and ‘Fried Flatbreads’ is known as ‘Chole Bhature’. This dish is one of the most eaten breakfast/snack in the Northern part of India. It can be also served as a breakfast as well as lunch or dinner.
This is one of such dishes which you can find almost everywhere in India. Be it a restaurant, street shops, or roadside eateries, called dhaba.
When I serve hot plate of Chole Bhatura in front of my boys, they poke a hole in the bhatura and watch it deflate before they dip it into the Chana, and bite it. They love chole bhature as much as I do.
This dish cannot be packed for lunch box as bhature will become soggy. This dish taste best when served hot.
How to make Chole or Chana masala in instant pot
Ingredients for Chole or Chana Masala
- 1 cup chickpeas soaked
- 1-2 tbsp cooking oil
- 1 tsp cumin seeds
- 1 small onion finely chopped
- 2 slit green chili (or to taste)
- 1 tbsp Ginger - Garlic paste
- 2 small tomatoes finely chopped
- cilantro to garnish
- 1 tsp amchur powder (dry mango powder)
- 1 tbsp Chana or chole masala
- 1 tsp turmeric powder
- 1 tsp garam masala
- 1 tsp red chili powder
- Salt to taste
Instructions to make chole or Chana masala
- Soak Chickpeas for at least 8 hours or overnight.
- Put instant pot on saute mode high and add oil.
- Once oil is hot add cumin seeds and fry for a minute.
- Add onions and green chili fry for 2 to 3 minutes till onions are translucent .
- Then Add ginger garlic paste and fry for another minute.
- Add tomatoes, fry for a minute or two.
- Add all the spice powders and salt mentioned above. Mix well.
- Add soaked chickpeas and water enough to cover the chickpeas by 1/2 inch. Give it a stir.
- Turn off saute mode, put the lid and vent to sealing position.
- Do manual high 35 to 40 minutes.
- The time variation depends on how soft you like your chickpeas to be. If you're using canned chickpeas, reduce the cooking time to 5 minutes.
- Garnish with Cilantro and serve with hot bhaturas .

How to make bhature at home
Ingredients to make bhature
- 2 cups Maida (All purpose flour),
- 3 tbsp Semolina(sooji)
- 4 tbsp Curd (yogurt)
- 1 tbsp Oil
- 1/2 tsp Salt
- 1/2 tsp Sugar
- 1 tsp Baking powder
- Water to knead into a dough
- Cooking Oil for deep frying
Instructions to make bhature at home
- Combine all the mentioned ingredients (except oil for deep frying) and make a soft dough. The dough should not be too hard or too soft on touch.
- Cover and keep aside for at least 3 to 4 hours.
- Pinch off some dough and make lemon sized balls and roll into thick round shaped rotis. It should not be too thick or too thin.
- Heat oil for frying .Once the oil is hot, reduce flame to medium high, slide the bhatura into the hot oil. Using the back of the ladle, press in the center and along the edges and you will find it will puff.
- Flip over and fry the other side till light golden brown. The bhature should cook on the inside and puff up.
- Serve hot with chole, sliced fresh onions.
