There’s nothing more comforting on a cold and rainy day than a steaming bowl of hot soup. The word Soup comes from the French word “Soupe”. It is an ancient delicacy. This primary liquid food is famous worldwide, and in every country, they are prepared in different ranges. 

Types of soup 

Mainly, there are two categories of soup: Clear Soups and Thick Soups. In addition to these, there are many variations in each category like veg, non-veg, vegan etc. Tomato Soup, Sweetcorn Soup, Chicken Soup, Lentil soup are few names of worldwide popular soup recipes and Beetroot Soup is one of them.

Health benefits of beetroot

Beetroots have been associated with numerous health benefits, including improved blood flow, lower blood pressure, and increased exercise performance. Beetroot is an excellent source of vitamins A, B6 and C, potassium, magnesium, iron and folic acid. It is also rich in powerful antioxidants and fiber.

How to choose  beetroot  for your soup

When choosing beetroots, go for those that are firm. If they’re soft, it is an indication they’re old and past their prime. You also won’t need those with leaves for this soup.

How does beetroot soup taste like

As beet root is the main feature in soup , it tastes very much like cooked beets.  But Recipes vary, so the other flavors in this soup depend on what's added. So in my recipe I have added carrots that adds  sweetness and tomatoes for it tang.

What to serve with the  soup

You can serve this soup with crusty bread, garlic bread, croutons.

When it comes to this beetroot soup, beets are absolutely the main ingredient here. It’s really one of those soups you can make and serve really hot on a cold rainy day.

Yet, you can serve it cold or warm on Spring and Summer days and it’ll fit perfectly too. You can enjoy it any time of the year. Every year, I always try to add a special Beetroot recipe for valentine recipe dinner for its beautiful color.

Beetroot isn’t exactly known for being the most kid-friendly of vegetables but the addition of the carrot helps to sweeten it a little, for my kids and it works like a charm (plus, extra nutrition and veggie!).

Beetroot soup has not only a fabulous color but delicious too. My kids were so intrigued by the color that they  forgot to ask what was in it!

I love the vibrant color that the soup takes on and it's wonderfully contrasted in color by pumpkin seeds garnish. 

How to make Beetroot Soup

INGREDIENTS

  • 1 tsp butter
  • 1 bay leaf
  • 2 -3 clove garlic
  • 1 inch ginger peeled
  • 1/2 cup onions roughly  chopped 
  • 2cup beetroot,  roughly chopped 
  • 1/2 cup carrot, roughly  chopped 
  • 2 tomato, roughly  chopped
  • ½ tsp sugar
  • 2 cup water  or vegetable stock
  • 1 tsp pepper, crushed
  • Salt to taste 
  • Pumpkin seeds for garnishing 


INSTRUCTIONS

1)  First wash all the vegetables nicely .Peel the carrots and beetroot and chop them.



2) Now in a pressure cooker  add the chopped beetroot , carrots, onions , tomatoes , garlic ,ginger. Add 2 cups of  water and pressure cook for 3-4 whistles. Then Let it cool.



3) Next add pressure cooked vegetables into a blender and blend to smooth paste. Add sugar and salt in it.



4) Now heat  the butter  in a pan, add bay leaf.




5) Then transfer the beetroot paste into the pan. Mix well adjusting consistency of water  and salt as required. Once the soup comes to a boil add 1 tsp pepper and mix well. Turn off the heat. Discard the bay leaf.



6) Enjoy beetroot soup garnished with pumpkin seeds (optional)
