2 ways to make appe
These can be made in 2 ways. One is a sweet version and other is spicy one which is also called as paniyaram or uniappam. If you make sweet paniyaram, try making use of jaggery in it for the healthy version.
Which veggies to add in appe
Fermented idli or dosa batter is used to prepare kara paniyaram or spicy paniyaram (Kuzhi paniyaram) and is mostly mixed with sauted onion, chilies. Other than that you can add vegetables of your choice like carrot, beans, beets etc. You can try these different combination of veggies which is also, the best way to include more vegetables in your kids meal.
What is paniyaram pan
It is made in special pan called as appe pan or paniyaram pan. These pan are made of cast iron, or non stick. It has 7 to 8 cavities in it. You can order online or can also get it at local Indian grocery stores.
It is famous snack in South Indian cuisine. It is specially famous in Tamil Nadu. They Can be made for breakfast or evening snacks or lunch boxes. They are crisp from out and soft and spongy from inside and are healthy .

Ingredients
- 2 cup -Left over idli/dosa Batter
- 2 tbsp -(cilantro)coriander/dhania, finely chopped
- 1 medium onion, finely chopped
- 1- 2 green chilies, minced(optional)
- 1 tsp-turmeric powder
- 2 tbsp oil - for tempering
- 1/2 tsp Mustard seeds
- 1/2 tsp ginger finely chopped
- Few curry leaves finely chopped
- salt as per taste
Instructions
For tempering heat oil in a small pan add Mustard seeds when they crackle, Add chopped curry leaves , ginger ,chopped onions and stir. When onion turns translucent, turn off the heat.
Take a large bowl, add idli/dosa batter to it. Add the( tempering)onion mixture, and coriander leaves , turmeric powder and salt to taste. Mix well.
Batter should not be too thick nor too runny.
Now for making Appe heat paniyaram pan over medium flame. and put little oil (1/2tsp) approximately in the cavities.
Pour a spoonful of batter into each one up to 3/4 of each mould.
Cover it and cook over medium flame for 2 to 3 minutes or until the bottom surface turns light golden brown. Remove the lid and flip each appe using a fork and spoon.
Cook another side also for a minute until the bottom surface turns light golden. Remove them using a spoon when done. Serve hot with coconut chutney.
