Aloo ki tikki are traditionally considered a street food or tea time snack in India, but  they are incredibly versatile and go with any meal as an ever-welcome side dish.

What is Aloo Tikki?

Aloo means  Potatoes and Tikki means Patties. So these are basically Potato Patties. Aloo tikki also known as Aloo ki tikkia or Aloo ki tikki, potato cutlet is a snack originating from the India.  Basically it is made of boiled potatoes, and spices. You can also add other vegetables like sweet peas and carrots.

Tips to make perfect Aloo Tikki

1) Never  overboil the potatoes. If you boiling in pressure cooker then they should be boiled for just 2 or 3 whistles in pressure cooker. If they are over cooked, potatoes can become mushy.

2) To make the tikkis crispy and delicious, avoid adding breadcrumbs when the potatoes are too hot. Mash the potatoes with a masher and then add breadcrumbs in it.

3) If you do not have breadcrumbs, you can alternately use rice flour, fine semolina or poha powder in the potatoes mixture. To make poha powder, dry roast them and then grind. Same with bread if you don’t have bread crumbs.

4) For making these Aloo Tikkis delicious, deep fry them on low to medium  heat.

5) You can store them in advance for the party. Shape the Tikkis and store in a refrigerator. While freezing make sure they don’t stick to each other. The cold temperature inside the fridge will harden and bind the tikki naturally. Before frying them, let them sit on kitchen countertop for at least 10 minutes . No need to thaw them. Then you can deep fry or shallow fry  them.

6) For frying tikkis in the  pan, let oil become really hot. Cold oil will break off your tikkis while it is turning soggy, waiting for the oil to be hot. Also, make sure you fry the tikki at a low flame that will let the tikki cook through without leaving it burnt.

How to serve Aloo Tikki

1) You can eat the aloo tikki as such or  with tomato ketchup, chutney or some hot & sweet sauce. 

2) They also taste good  in a sandwich or bun with all your favorite toppings and ketchup or  chutney

3) Drizzle whisked yogurt on top along with sweet tamarind chutney and green chutney.

4) It can also be served with  dried white pea curry also called ragda along with onions and chutneys.

5) Serve it as a light  meal with side salad.

How do you reheat leftovers?

To rewarm leftovers, bake them uncovered at 350 °F for  five minutes to help retain their crisp. You can also microwave them for 1 or 2 minutes.

How to make Aloo Tikki

INGREDIENTS

  • 3 potatoes / aloo, boiled 
  • 1 chili, finely chopped 
  • 1 tsp ginger grated
  • ¼ tsp turmeric powder(optional)
  • ½ tsp red chili powder 
  • ½ tsp amchur / dry mango powder
  • ½ tsp chaat masala
  •  salt to taste 
  • 2 tbsp coriander, chopped
  • 1 tbsp corn flour
  • 1 tbsp bread crumbs 
  • oil, for frying

INSTRUCTIONS

1) Wash the potatoes. Cut them in halves and boil them. Potatoes will cook more quickly if you cut them into halves before boiling. You can  cover and boil them on stove-top or using your pressure cooker.

2) When perfectly boiled. Turn off the heat. You can check by pricking it with knife.

3) Do not over boil and make them mushy. Once  they are done peel and let them cool.

4) Mean while finely chop onions, coriander leaves, grate ginger and finely chop green chili (optional) and keep ready

5) Next in a large mixing bowl or a plate  take the boiled  potatoes and  mash them with masher or hand. You can grate them too.

6) Now add the onions ,coriander leaves, ginger and chili to potatoes.

7) Add  chili powder, chaat masala, coriander powder, garam masala powder, dry mango powder and salt.

8) Now add  corn flour and mix well alternatively use poha powder or rice flour as it helps to absorb moisture. Next add bread crumbs it helps in binding.


9) Mix well forming a soft dough sprinkle some water over it  since it can become is dry and crumbly.

10) The mixture should be this texture so that we can form tikkis.



11)  Make Tikkis with hand  by forming round  and pressing it gently to make it flat and keep them  aside.

12) While  you making tikkis put the oil in pan and let it heat up. Shallow fry in hot oil. you can alternatively roast or deep fry until it turns golden brown. You can also bake your tikkis.

13) Don't overcrowd too much, let it cook on one side  them flip over and cook on other side.

14) Finally, when cooked on both sides take them out of pan on absorbent paper towel.

15) Serve with chutney of your choice.
