Recipe for Carrot Zucchini Paratha
This Zucchini (Courgette ) Paratha is an easy, delicious, & nutritious Indian flatbread made with with Carrots, Zucchini, whole wheat flour, and Indian spices.
It is a great way to sneak in veggies for picky eaters. Parathas are so versatile that they can be pepped up with many additions. I came up with this combination of zucchini and carrots sitting in my fridge. I had almost used all the zucchini in my ratatouille dish the other day. Only had few left. I was wondering how best to use up both of them, and it flashed to me to just grate it and fold it into the paratha dough to make Zucchini carrot paratha. Sometimes I just sauté them in olive oil as a side dish. This is a great way to include them in our meals. Well, this was the perfect way to use both of them up and make paratha with tons of flavor.
How to sneak in the veggies carrots and zucchini in paratha ?
To make carrots zucchini paratha I added grated zucchini and carrots along with chopped onion in wheat flour. Knead and make a soft dough. Roll parathas and serve with curd or raita. It is good and healthy for breakfast or lunch box. It is the great way to sneak in the veggies in paratha. You can also check my methi paratha and other parathas for tiffin ideas.
Do you need to peel zucchini for making paratha?
Peel if you like. I added with green layer and did not peel while making parathas. The peel contains a large amount of nutrients, so avoid peeling it .
Let’s have a look at the main vegetable ingredients used in the recipe
Zucchini- I have added only grated zucchini in the dough. The high water content in zucchini is the reason we will require very less water to knead the dough.
Onions- Chopped onion gives a crunch in paratha. Do not skip it. Add finely chopped onions.
Carrots- I have added only grated carrots .It goes well with zucchini and adds color to our paratha.
Which flour to use for making zucchini carrots paratha?
To make this paratha I used plain whole wheat flour but you can use multigrain flour too.
Serving suggestions for paratha
At home, we prefer to consume this carrots zucchini paratha with plain yogurt , raita or pickle.

How to make zucchini carrot paratha
Ingredients to make zucchini carrot paratha
- Wheat flour – 1 & 1/2 cups
- Zucchini, grated – 1 cup
- Carrot, grated – 1/4 cup
- Onion finely chopped -1/4 cup
- Yogurt/Curd – 2 tbsp(optional)
- Red chilli powder – 1 tsp
- Turmeric – 1/4 tsp
- Oil – 1 tbsp + as needed
- Salt – As per taste
Instructions to make zucchini carrot paratha
Cut off the ends of the zucchini. Wash and grate zucchini and carrot using a fine grater. Add Finely chopped onions. Now add the turmeric powder, red chili powder, salt, yogurt (optional).
In a mixing bowl, add flour. Now Mix everything well. Add very little water and knead the dough. Let the dough be stiff as later also it will leave little water.
Divide the dough into lemon sized 7-8 balls.
Dust each ball with generous flour and spread into thick parathas.
Heat a tawa or griddle over medium heat. Place the paratha on the tawa and cook until brown spots form on both sides, flipping occasionally.
Spread some ghee (butter) on both sides of parathas and cook. Cook in medium flame so that it gets cooked thoroughly.
Servings - 8 parathas
