Mung Bean Salad Weight loss Recipe
Why do I call it a weight loss recipe ?
Since this recipe consists of crunchy mung beans which is rich in fiber and proteins that helps you to loose weight. It can be considered as a weight loss recipe.
It is a great filling salad. You can enjoy it as a light lunch or it can be a great side dish with any meal. It is tasty and flavorful salad for this summer. It is sometimes also called as “moong beans” or “green grams”.
How much time it takes to sprout the mung beans ?
The mung beans will take about 24-48 hours to sprout.
You can also steam or boil the mung beans if you want. Try to include this recipe in your diet at least once in a week.
Serving suggestions
It is a beautiful salad you can throw in the veggies of your choice. you can also serve this salad on cabbage leaves or lettuce leaves to make it look more appealing and authentic in your get together parties.
You can also add this in your party menu as appetizer to scoop it up with your tortilla chips.
What are the things that goes in this crunchy mung beans salad
Mung beans- I have waited it to sprout. You can also just soak overnight and use it the next day.
Onion - I have used red onions, you can use red or white of your choice.
Carrots- I have grated the carrots.
Tomatoes- I love tomatoes in in my salad. I have used Roma tomato
Cucumber- They provide crunch in the salad
Cilantro- I have used cilantro/coriander leaves . If you do not like cilantro you can add parsley, basil, or mint
Lemon juice- fresh lemon or lime juice is always better.
Seasonings- salt ,black salt, chaat masala, red chili powder to taste
How to make protein salad or mung bean salad
Ingredients for mung bean salad
½ cup sprouted mung beans
½ cup tomatoes diced
½ cup red onion diced
½ cup cucumber diced
½ cup carrots grated
1 tbsp Lime juice
cilantro to garnish
salt and black salt to taste
Chaat masala to taste
A pinch of red chili powder or green chili
Instructions to make mung bean salad
1. Rinse the mung beans and then soak for at least 8 to 10 hours or overnight. I always soak it overnight.
2. To cook the beans, bring a medium pot of water to a boil. Add the green mung beans, and then let the beans gently simmer for approximately 20 minutes or until just tender not mushy. Drain and run under cold water to stop the cooking process.
3. Start mixing sprouted mung beans in a mixing bowl and then add your favorite veggies. I like to add carrots, cucumbers, onions, tomatoes.
4. Add your favorite garnish and spices. I love cilantro, salt, and red chili powder. You can spice it up with black pepper, paprika.
5. Add a generous amount of freshly squeezed lime juice, mix and enjoy!
