Quick Zucchini Stir Fry
A quick sautéed zucchini recipe combined with onions and tomatoes for an easy side dish. You can enjoy this as a side dish. My sautéed zucchini and tomatoes pair beautifully with lots of main dishes like rice or Indian flat bread.
Do you need to peel zucchini before cooking?
Absolutely not. Zucchini skin is soft, thin, and perfectly edible, so don't peel it off. It has lot of nutrients in it.
Here's what goes in my quick sautéed zucchini recipe
Zucchini - Summer-ripe zucchini is the perfect base for this recipe. You’ll slice it lengthwise in half (or quarters, if it’s huge!), then cut it horizontally into slices. No need to peel them.
Tomato- I used Roma tomatoes for my recipe, but you can use any ripe tomatoes.
Onions- You can use any onions. I used yellow ones.
Oil- You can use any cooking oil or olive oil
Cilantro - For garnishing I used cilantro.
Spices- I used cumin , turmeric powder, coriander powder, chili powder (paprika).
Garlic and ginger- They enhance the flavor of the dish.
How to make quick sauteed zucchini for side dish
Ingredients for Zucchini stir fry
1/2 medium onion chopped
1 tsp ginger minced or grated
¼ tsp recd chili powder or paprika
1 clove garlic minced
1 tsp cumin
1/2 tsp turmeric powder
1 tsp coriander powder
salt as per taste
1 zucchini chopped
1 tomato chopped
cilantro (coriander leaves)for garnish
Instructions for Zucchini stir fry
Heat a pan with oil, add cumin when it sizzles, add onions, ginger and garlic sauté for 3-4 minutes or until onions become soft.
Next add in chopped tomatoes sauté it for another couple of minutes. Don’t make it mushy.
Add turmeric powder, coriander powder, chili powder and salt .
Now Stir in zucchini and sautee 2 minutes.
Cover and let cook for 10 to 15 minutes or until squash is tender. Keep stirring in between couple of times.
Garnish with fresh cilantro.
Total Time 30 minutes
