Recipe for Sindhi Kadhi
What is kadhi?
Kadhi is a thick gravy based on gram flour,to which dahi (yogurt) is added to give it a bit of sour taste.
Different types of kadhi
Every region in India has its own Kadhi version and own unique flavors and textures. They have their own way of making it .Like in north Kadhis are made with pakoras (fritters) in it, while gujarati kadhi is sour and sweet at the same time and they don’t contain pakoras in it. While Sindhi kadhi’s tanginess comes from tomatoes or tamarind pulp and not yogurt, and they contain a variety of vegetables in it.
How is Sindhi kadhi different?
In Sindhi kadhi we do not add yogurt instead we add tomatoes or tamarind pulp .Sindhi Kadhi is very delicious and nutritious.
Probably it is most popular Sindhi food across India, this kadhi is packed with the goodness of vegetables. Traditionally kadhi is served with rice but it can be served as a soup as well.
What is the speciality of Sindhi kadhi?
This tangy Sindhi Kadhi is made with roasted besan, (gram flour) and mix of vegetables and served with rice and aaloo tuk.
One of the the reason I like Sindhi kadhi because my kids end up eating a variety of vegetables; something they wouldn’t have done as happily otherwise.
What is aaloo tuk ?
Aaloo tuk, is nothing but twice fried potato that is fried till it is very crispy and then sprinkled with spices,served with kadhi and rice.
What are the ingredients to make Sindhi kadhi ?
For Kadhi :
Base ingredients: besan (chickpea flour or gram flour), turmeric, salt, and water.
For Tempering: oil, asafoetida (hing), seeds ,mustard seeds, cumin seeds, and .
Vegetables - you can add variety of vegetables in kadhi . I have used okras(bhindi), cauliflower,potato, cluster beans(gavar),carrots.
Benefits of consuming kadhi during pregnancy
Kadhi is also a recommended diet for pregnant women as it is rich in folate, vitamin B6 and iron and ensures the growth of the baby which reduces the change of miscarriage.
What to serve with Sindhi kadhi?
Serve Sindhi kadhi with rice and crispy aloo tuk. You can serve it with jeera rice too. You can have it as soup
Can you use tomatoes while making Sindhi kadhi?
Yes you can .It can be made using tamarind or with tomatoes. I have used tamarind pulp in my recipe.
How to make Sindhi Kadhi
Ingredients for Sindhi Kadhi:
1/2 cup gram flour (besan)
3 tbsp oil divided
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/8 tsp asafetida (hing)
1/2 tsp turmeric (haldi)
1/2 teaspoon red chili powder
3 tbsp tamarind pulp
salt as per taste
2 cups of mixed vegetables ( okras, carrots, potato ,cauliflower, gavar or cluster beans)
4 cups of water
Instructions to make Sindhi Kadhi
1) Wash and dry the vegetables cut them and set aside. Don't cut too small.
2) Firstly Heat little oil in pan and fry the vegetables one by one till they 75 to 80% cooked. Like first fry the okras and then Next vegetable .Each vegetable takes it own time to cook so don’t mix them while frying.
3) Now next add the oil in a pan over medium heat, add mustard seeds and cumin seeds, as they crackle add asafetida, stir for few seconds.
4) Reduce the heat to low to medium and add besan(gram flour). Roast the besan stirring continuously till the besan has become golden brown and aromatic (about 3 to 4 minutes).be sure to not burn the besan.
5) Now add water slowly, little by little at time stirring continuously to avoid forming lumps. Add turmeric powder, red chili powder salt and tamarind pulp.
6) After Kadhi comes to boil, add the fried vegetables lower the heat to low medium and cover the pan and let it simmer for about 8-10 minutes, until vegetables are tender. If needed add more water, this should be running consistency but not watery. Serve hot.
