Can anything else match up to the feeling of  eating puffy hot palak puri  with your favorite curry for the  breakfast.


What is puri ?

Puri or poori is an Indian deep-fried bread made with whole wheat flour. 


Any kind of poori is usually served as a breakfast, but you can have them for lunch or dinner as well.



What are these green puris? 

Palak Puri is a flavorful Indian puffed bread made from iron-rich spinach and whole wheat flour. Pureed spinach is added to whole wheat flour along with spices to make the poori dough which lends a beautiful green color to the puris making it appealing even to the fussy eaters. 

Palak Puri can be served as breakfast with pickle and curd or packed in the lunch box with potato curry and raita.

Can I use frozen spinach?

Yes ,you can use frozen spinach or readymade spinach puree to make this puri  dough. Follow the packet instructions to defrost and use it . But in my personal experience, I think the taste, texture, and color of the puri  will be not as good as the one made with fresh spinach leaves.


How to make Palak Puri

Ingredients for  Palak Puri

225 grams spinach
1/2  inch ginger

1/2 tsp coriander powder

1/2 tsp chili powder 

1/2 tsp cumin powder

2 cups whole wheat flour

1/2 tsp ajwain or carom seeds
 salt as per taste

1 tbsp oil  while  kneading the  dough

water as needed

oil to fry the puri


Instructions to make Palak Puri

  1. Bring water to a light boil in a pan Then add spinach to it. Cook for 2 minutes until the leaves wilt. Then drain the water and transfer the leaves to another  bowl  and let it to cool down.
  2. Once the leaves cool down then next transfer leaves to a blender along with ginger. Puree the contents to a smooth paste without adding any water. Set it aside.
  3. Take wheat flour in a bowl, add ajwain and salt  and add spices like coriander powder, cumin powder ,chili powder and mix. 
  4. Then next  add the puréed  spinach to the flour. Start mixing nicely everything together.
  5. Also add the 1 tbsp oil and continue to mix and knead the dough.
  6. Knead to a tight dough. Not very stiff and not too soft either. Cover the dough and let it rest for 20 minutes.
  7. After the dough has rested, divided the dough into small  parts for puris. Meanwhile heat oil in a kadai on medium to high heat to fry the puri.
  8. Take one part  of the dough and start rolling it. Roll into a circle of 3 to 4 inch diameter.  You should roll the puri neither too thin nor too thick.
  9. Add rolled puri into hot oil. The oil should be quite hot to fry the puris. Start pressing the puri with a spatula very lightly after few seconds you dropped the puris in the oil  which will make it puff up.
  10. Flip and cook the other side too until golden brown spots appear. Remove on a paper towel. Roll and fry all puris similarly. Serve these puris with curry of you choice as a side  and pickle.
